SWEDISH WALNUT-CINNAMON COOKIES


These delicate cookies are coated with walnuts, which toast during baking.

Makes 2. dozen cookies

  • 1 cup butter, room temperat
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1\2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1\2 cup finely chopped walnut
  • 2 tablespoons cinnamon
  • 2 tablespoons sugar



  1. In large bowl, cream butter and sugar. Beat in the egg and vanilla until light. Sift flour with baking powder and 1 teaspoon cinnamon. Add to the creamed mixture, blending well. Chill dough 30 minutes.
  2. Cover baking sheets with parchment paper or grease lightly. Preheat oven to 350°F.
  3. Mix the walnuts, 2. tablespoons cinnamon, and z tablespoons sugar in a small bowl.
  4. Shape chilled dough into balls the size of walnuts. Roll each ball in the walnut-cinnamon mixture. Place on prepared baking sheets about 3 inches apart. Bake 10 to 12. minutes until golden and set. Do not overbake.
